Making slight variations to a task (e.g. changing the numbers, context, or materials used) will help to maintain interest while students further develop skills and concepts. Some subjects were given the problems in 8 blocks of 3 (repeating 3 different problems 15 times each before moving to the next block of 3), and the other half completed the problems in 2 blocks of 12. The teacher lectures, and the students listen and take notes as needed. This last piece is exceptionally important, as this is where students have a voice, take ownership of their learning, and can convey their understanding to others.

My answer is that we follow our interests - and our interests inevitably lead to science, literature, history, mathematics, music - all the things that have interested people before anybody thought of them as "subjects". It may seem a little strange to you that I am recommending that you share this book with both preservice and inservice elementary school teachers. Japan, Singapore and Hong Kong are leading examples, although their curriculum may not be easily accessible, and may or may not be translated into English.
